By adding the zest of a lime, it gives these addictive lemon bars a tangy, sweet and slightly tart taste. WARNING: You cannot eat just one. Ingredients:
1 cup all-purpose flour |
1/2 cup butter, softened |
2 eggs, slightly beaten |
1 cup sugar |
2 tablespoons flour |
5 tablespoons lemon juice |
zest of one lime |
1/4 cup powdered sugar |
Directions:
1. Preheat oven to 350 degrees. Prepare an 8x8 pan lined with parchment paper. 2. CRUST:. 3. Place crust ingredients into a food processor and pulse 5-6 times till mixture resembles medium crumbs. 4. Pat down firmly into prepared pan. 5. Bake at 350 degrees for 15 minutes. Meanwhile prepare the filling. 6. FILLING:. 7. Mix all filling ingredients, EXCEPT powdered sugar, in a medium bowl. Pour over BAKED crust and return to oven for an additional 25 minutes. 8. Remove and cool completely. 9. Dust generously with powdered sugar and cut into bars. |
