I'll give you the bare truth. I don't really enjoy jarred salsa much at all. It's just too easy to make your own and adapt it to what you feel like that day. This is a perfect base for a yummy salsa good on it's own, but also very fun to play with. Read more . Great dip for chips, or as a topping for fish or chicken. This salsa just gets better with time. Ingredients:
2 cans black beans, drained and rinsed
2 cans of mexican tomatoes with chilies (can use regular and add serrano or jalapeno or chipotle)
1/2 bag of frozen sweet kernal corn
1/2 cup lemon juice
1 medium red onion diced
good bunch of cilantro, leaves plucked from stems
1 tsbp cumin
2 tbsp chili powder (regular, chipotle - whatever you're feeling)
1-2 tbsp garlic salt
Directions:
1. Toss frozen corn into large mixing bowl
2. Pour cans of tomatoes over the corn
3. Pour drained and rinsed black beans in bowl
4. Toss in the diced onion
5. And the cilantro
6. And the lemon juice
7. And the seasonings and mix
8. Adjust the seasonings to your taste, it's what makes the recipe great. Things I've incorporated before to alter the orginal recipe: added fresh minced serranos, canned chipotles, jalapenos, chopped mangoes, basil, scallions, garlic, fresh tomatoes, black olives, green olives. Don't be afraid!!! The fun part is you get to keep tasting it to check what you need more of. :)
