Acorn Squash With Creamed Onions

Ingredients:

  • 1 tsp salt
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1-1/2 cups milk
  • 1/4 tsp ground nutmeg

Directions:

  1. Wash squash then cut in half lengthwise and remove seeds.
  2. Place squash cut side down in baking pan and add a few tablespoons water to pan.
  3. Bake at 400 for 30 minutes.
  4. Turn cut side up and sprinkle with salt and continue baking 30 minutes until tender.
  5. Cook onions in boiling salted water covered for 30 minutes then drain.
  6. Simmer raisins in water to cover 10 minutes then drain.
  7. Melt butter then blend in flour and salt.
  8. Add milk all at once then cook and stir until sauce is thickened.
  9. Blend in nutmeg then gently stir in onions and raisins.
  10. Spoon into cooked squash halves and sprinkle with additional nutmeg.
