a full flavored soup has granny smith apples and Sweet Condenced Milk. Originaly used butternut squash but I did not like flavor. To peal acorn squash first bake in oven for 10-15 minutes. I found this recipe on a cooking program about a decade ago. It sounds strange but is sooo good Ingredients:
1 tablespoon butter |
1 1/2 cups onions |
2 medium acorn squash, cubed |
2 granny smith apples, cubed |
4 cups chicken broth |
1 tablespoon maple syrup |
1 pinch cinnamon |
3/4 cup sweetened condensed milk, no fat |
salt |
pepper |
Directions:
1. put in pan butter, onion, acorn squash, apples, chicken stock simmer 20 minute. 2. Drain but retain liquid. 3. Puree solids, add Maple Syrup, Cinnamon, Sweet Condensed Milk, Reserved liquids, salt & pepper. |
