Acorn Squash Sage Shooter

Ingredients:
1 tablespoon olive oil
1 teaspoon butter
3 cups diced acorn squash
2 garlic cloves
salt and pepper
4 cups chicken broth or 4 cups vegetable broth
1 tablespoon maple syrup
1 tablespoon coarsely chopped fresh sage
Directions:
1. In a saucepan, heat oil and butter over medium heat.
2. Add squash and garlic and 1 teaspoon salt and cook, stirring, until squash is caramelized, 10-15 minutes.
3. Add broth and bring to a simmer. Reduce heat and boil gently until squash is falling apart, 15 minutes.
4. Add syrup, sage and 1/2 t pepper.
5. Transfer to a blender and puree until smooth.
6. Variation: garnish with pesto oil.
