Acorn Squash Rings With Pears And Dried Cherries |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Crowell Estate in Arlington, Texas in 1997. Ingredients:
1 acorn squash |
1/4 cup butter |
1/2 cup dried cherries |
1/4 cup sugar brown packed |
1/2 cup fresh pear finely chopped |
1 teaspoon cornstarch |
2 teaspoons water cold |
Directions:
1. Cut unpeeled squash into 1/4 rings with sharp knife. 2. Remove and discard seeds then place in shallow dish and set aside. 3. In 4 cup measure cook butter in microwave on high until melted. 4. Stir in cherries and brown sugar then cook uncovered in plastic wrap on high for 3 minutes. 5. Stir in pear then spoon in each ring. 6. Cover and cook on high in microwave for 7 minutes then drain juice with 1 cup measure. 7. Dissolve cornstarch in cold water then whisk into juices. 8. Cook on high in microwave for 45 seconds until thickened then pour over rings. |
