This is my father's recipe. It's very filling and easy to make. It's even better the day after. Ingredients:
2 cans diced tomatoes with green chili peppers |
1 cup cooked and drained hot sausage, sliced |
1 medium onion, chopped |
1 cup frozen peas |
2 cups chicken broth |
1 medium green pepper, sliced |
8 ounces shrimp |
1 cup instant rice |
Directions:
1. Stir fry onion and pepper, drain 2. Add to Dutch Oven along with both cans of tomatoes and juice. 3. Add chicken broth and frozen peas, sausage and shrimp. 4. Simmer on medium for 5 minutes. 5. Bring to a boil and then add instant rice. 6. Lower heat and simmer for 15 minutes. |
