A heart warmer guaranteed to brighten your day. Ingredients:
1 teaspoon butter, no substitutions |
1 quart roma tomato, diced |
1 1/2 cups onions, peeled and diced |
2 tablespoons cumin, ground |
1 1/2 tablespoons salt |
1/2 tablespoon granulated garlic |
2 teaspoons cayenne pepper |
2 teaspoons white pepper |
1 gallon chicken broth |
4 cups cooked chicken, shredded |
1 avocado, peeled and diced |
Directions:
1. In large Dutch oven, sauté onions in butter till translucent. 2. Add next seven ingredients and continue cooking for 3 minutes. 3. Add broth and pulled chicken to sautéed vegetables and simmer an additional 7 minutes. 4. When soup is ready to serve, add avocados before serving. |
