Beans with rice have always been a staple not forgetting the corn tortilla! Ingredients:
11 cups water |
5 cups pinto beans |
2 t oil |
1 t salt |
1 medium onion sliced |
6 cloves garlic crushed |
Directions:
1. In a colander rise and clean beans. 2. In a large pot combine all the ingredients and bring to a boil 3. Once at a boil cover and put on low for 2 hours. 4. Mash if desired and garnish with freshly chopped onions. 5. Just a side note if you soak the beans overnight and rise them in the morning they will not be as gassy. |
