Absurdly Easy Rice and Peas Ala Lena |

I worked with a C. named Lena a long time ago. She was from Jamaica and shared her easy Rice and Peas recipe with me. This is great with Princess Buttercup's Jerk Chicken. Ingredients:
2 (15 1/2 ounce) cans goya small red beans, drained and rinsed |
1 (15 ounce) can coconut milk |
2 green onions, chopped |
2 garlic cloves, chopped |
2 sprigs fresh thyme or 1/2 teaspoon dried thyme |
2 scotch bonnet peppers, whole |
4 cups chicken broth |
2 cups uncooked long grain white rice |
salt |
Directions:
1. In a large pan, mix broth and coconut milk. 2. Add green onion, garlic, thyme, and over medium low heat bring to boil. 3. Add the rice and stir gently for about 2 minutes. 4. Continue cooking on medium low heat. 5. Add the 2 peppers on top of rice. 6. Cover pan. 7. Simmer for 20-30 minutes or until rice is cooked and liquid is absorbed. 8. Remove pepper. |
