Absolutely the Best Carrot Cake |

This is one that I grew up with. You will love it. Ingredients:
2 cups granulated sugar |
1 1/2 cups vegetable oil |
4 eggs |
2 cups sifted flour |
1 teaspoon cinnamon |
2 teaspoons baking soda |
1 teaspoon salt |
3 cups carrots, grated |
1/2 cup pecans, chopped |
8 ounces cream cheese |
1 lb confectioners' sugar |
1/4 lb butter |
1/2 cup coconut, grated |
2 teaspoons vanilla extract |
Directions:
1. Cake. 2. Combine Sugar and Oil. 3. Add Eggs and beat until well mixed. 4. Mix in Flour, Cinnamon, Baking Soda & Salt. 5. Slowly mix in Carrots & Nuts. 6. Pour into a 9 x 13 pan and bake at 325 degrees for 50 - 60 minutes. 7. Cool Before Frosting. 8. Frosting. 9. Soften Butter. 10. Combine Cream Cheese, Confectioners Sugar, Butter, Coconut and Vanilla Extract. 11. Beat and apply to cooled caked. 12. Apply to Cooled Cake. |
