While looking through the cookbooks in a thrift shop I found one on Machine breads. It has the most incredible recipes. This is one I just had to try today. The bread is so tender & slightly sweet with pieces of apricot dotted across each slice Ingredients:
1 1/2 lb loaf |
3/4 cup water |
2 cups white bread flour |
1 tblspn dry milk powder |
1 tsp salt |
1 tblspn butter |
3 tblspns apricot jam |
1/2 cup diced dried apricots |
1 tsp fast rise yeast |
2 lb loaf |
1 1/4 cups water |
3 cups white bread flour |
2 tblspns dry milk powder |
1 1/2 tsp salt |
2 tblspns butter |
1/4 cup apricot jam |
3/4 cup diced dried apricots |
2 tsp fast rise yeast |
Directions:
1. Place water in a microwave safe container & add butter 2. Heat until butter has melted 3. Pour into bread machine pan & stir in the apricot jam 4. Allow to cool to luke warm 5. Stir the dry milk & the salt into the flour until well mixed 6. Add diced apricots to the flour mixture & mix well until the apricot pieces are separated throughout the flour 7. Add on top of the water in the bread machine pan 8. Make a well in the center & add the yeast 9. Set your machine for white bread & light or medium crust 10. Turn on machine. 11. NOTE:- Use a jam that has high content of fruit. 12. Although this recipe was created for the machine I'm sure it would turn out just as good by hand |
