Ingredients:
1 1/2 lbs deli roast beef, oscar mayer thin deli style lunchmeat
1 cup shredded low-fat cheddar cheese
8 slices red onions
8 slices green bell peppers, slice in rings
8 slices red bell peppers, slice in rings
1 cup medium chunky salsa, old el paso thick n chunky
8 whole wheat rolls, pepperidge farms seven grain
Directions:
1. In a nonstick skillet over medium heat, cook the onion and peppers until tender. Add the salsa and heat until warm. Construct the sandwich with the buns, roast beef, onions, peppers and cheese, then warm in the microwave for 1 – 2 minutes on high, until the cheese starts to melt.
