A great snack or breakfast bread. Recipe makes 2 loaves. This freezes well. Ingredients:
3 eggs |
2 cups sugar |
1 cup olive oil |
1 cup applesauce |
1 cup banana, ripe and mashed |
1 cup carrot, grated |
1/2 teaspoon cinnamon |
1/2 teaspoon allspice |
1 1/2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon vanilla |
3 cups whole wheat flour |
Directions:
1. Beat eggs. 2. Add sugar, oil and vanilla. 3. Add applesauce, bananas, and carrot. Mix well. 4. Mix spices into bowl then add flour gradually. 5. Pour equally into 2 greased loaf pans. 6. Bake at 350 for 1 hours or until knife inserted comes out clean. |
