Modified by the Filipinos from Central to South American influences, this fragrant soup is made with ground beef, onions, tomatoes, potatoes, and lots of garlic. Serve as a stew or generously over rice. Ingredients:
1 tablespoon cooking oil |
1 onion, diced |
4 cloves garlic, minced |
1 large tomato, diced |
1 pound ground beef |
4 cups water |
1 large potato, diced |
2 tablespoons beef bouillon |
2 tablespoons fish sauce |
salt and pepper to taste |
Directions:
1. Heat the oil in a large pot over medium-high heat. Cook the onion and garlic in the hot oil until the onions are tender. Stir in the tomato; cook until soft, about 3 minutes. Crumble the ground beef into the pan and cook until brown, about 5 minutes. Add the water, potato, beef bouillon, fish sauce, salt, and pepper; reduce heat, cover, and simmer until the potatoes are tender, stirring occasionally, about 30 minutes. |
