I invented this to go with a lamb and gravy dish. Yams/sweet potatoes, like carrots, winter squashes and orange colored fruits are anti-oxidants that help to prevent cancer. Personally, I don't like the overly sweet versions of yams served on holidays. This is a super quick dish that goes well with meat and poultry every day! Ingredients:
2 tablespoons butter |
3 scallions, chopped |
2 (15 ounce) cans yams, drained and sliced into bite size pieces |
fresh ground pepper |
Directions:
1. Microwave butter in a microwave safe dish, 30 seconds or until melted. 2. Add scallions, yams and pepper. 3. Stir gently, cover with plastic wrap and microwave at full power for 3-4 minutes or until hot. |
