A Walk On The Wild Side Soup |

I love wild rice and this soup is really filling and very warming. It is a bit of work but worth every bit of the effort. Ingredients:
1/2 stick of unsalted butter |
4 celery ribs, diced |
2 large carrots, diced |
2 small onions, diced |
1 medium leek, cleaned well and sliced |
1/2 cup of slivered almonds |
2 tbsp of fresh dill |
2 bay leaves |
1/3 tsp of turmeric |
3 quarts of chicken stock |
1 1/2 cups of wild rice |
1/2 cup white rice |
4 cups of diced cooked chicken |
3 cups of sliced mushrooms |
3/4 tsp of salt |
1 tsp of ground black pepper |
Directions:
1. Melt butter in large heavy skillet over medium heat. 2. Add celery, carrots, onions, and almonds and cook until slightly softened, stirring ocassionally. 3. Mix in dill, bay and turmeric. 4. Bring 3 quarts of stock with wild and white rice to a boil in a large pot. 5. Reduce heat. 6. Add celery mixture to broth and simmer for 30 minutes, adding more stock if soup is too thick. 7. Add chicken and mushrooms. 8. Discard bay leaves and simmer for 10 minutes more. 9. Adjust for salt and pepper. 10. Serve and warm yourself up quite nicely. |
