Impressive and delicious is all I can say about this one. I made this for a football party and it was devoured. It is so pretty too. Ingredients:
1 cup finely crushed tortilla chips |
3 tablespoons melted butter |
16 ounces cream cheese |
2 large eggs |
10 ounces colby/jack cheese, shredded |
1-4 ounce can chopped green chilies, drained |
1 cup sour cream |
1/2 cup diced scallions |
1/2 cup diced tomatoes |
1/2 cup sliced black olives |
1 cup chopped yellow peppers and orange peppers, mixed |
tortilla chips to serve |
Directions:
1. Preheat oven to 325°. 2. Mix crushed tortilla chips and butter and press into a springform pan. 3. Bake for 15 minute. 4. In a bowl, beat cream cheese and eggs with a mixer until well blended. 5. Mix in cheese and chilies. 6. Pour over crust and bake 30 minutes. 7. Cool slightly. 8. Spread sour cream over cheesecake. 9. Loosen cake from rim of pan. COOL BEFORE removing the rim of the springform pan. 10. Cover and refrigerate overnight. 11. When ready to serve, top with scallions, tomatoes, black olives and yellow and orange peppers. 12. Serve with tortilla chips. |
