If you're wondering what to do with all the excess zucchini from your garden and from the neighbor's gardens overflow, here's a suggestion. This pie tastes just like apple pie (or, if you like, you can use equal amounts of apples in place of the zucchini). Ingredients:
1 unbaked pie shell |
2 1/2 lbs zucchini (peeled, sliced) |
1/2 cup sugar |
2 tablespoons flour |
1/2 teaspoon nutmeg |
2 tablespoons lemon juice |
1/2 cup sugar |
1/2 cup flour |
1/2 cup butter |
Directions:
1. Mix together all ingredients, except for the last 3 topping ingredients. 2. Place in pie shell. 3. For topping: Mix sugar and flour. Pour on top. Dot all over with chunks of butter. 4. Place pie on a cookie sheet. 5. Bake at 350* for 1 hour. |
