A Steak And Potato Guy's Stew |

This soup has only a few ingredients but they come together to create a warm, simple and filling meal. All that is needed to round this out is a side salad and some crusty bread and butter. Ingredients:
2lbs beef( stewing meat or better depending on your budget) |
2t butter |
2t olive oil |
1 large onion, diced(red or sweet) |
3 cloves garlic, minced |
1 1/2-2lbs potatoes, cubed(i don't bother peeling |
12oz fresh mushrooms, sliced |
6 cups beef stock |
2t fresh ground black pepper |
1t worcestershire sauce |
8oz bottle prepared horseradish or horseradish sauce |
1t dried dill weed(plus fresh, if desired, for garnish) |
juice from 1 lime |
8oz sour cream |
Directions:
1. Melt butter and olive oil and saute onion and garlic over low heat for about 5 minutes. 2. Add all remaining ingredients except lime juice and sour cream. 3. Bring to a boil then immediately reduce heat to simmer. 4. Simmer, uncovered, stirring occasionally, for about 1 hour, or until meat and potatoes are done and tender. 5. When done, add lime juice and sour cream and carefully stir together. 6. Garnish with fresh dill 7. *use less stock of a thicker stew/soup is desired |
