Kale and Avocado Salad. Mmm-mmmm good. Kale is one of those scary-looking greens that never appeared on our table when I was growing up...probably because my mother knew it would horrify everyone were she to attempt serving it. Read more . But it’s actually quite pleasant, lacking the bitterness that characterizes so many types of greens. This recipe - popular even among Raw Food fanatics - shows it to good advantage. Ingredients:
one bunch kale |
one avocado |
sea salt...about 1-2 tsp |
juice of one lemon |
cayenne pepper |
tomato (optional) |
Directions:
1. Take the kale and separate the leaves from the stems. Discard the stems...or reserve them for vegetable stock. 2. Place the leaves in a large bowl and sprinkle with about a teaspoon or two of sea salt. 3. With your hands, mash the leaves and salt together until the leaves are well wilted. Add the flesh from half of the avocado - if you like a more “avocado-ey” salad, add the whole thing - and mash it up with the kale leaves. Add the juice of one lemon and season with cayenne pepper to taste. 4. [Some recipes call for the addition of a couple of diced-up tomatoes. Your call.] 5.
