Ingredients:
herb butter
1/2 cup italian parsley chopped
2 tbs fresh tarragon
2 tbs fresh chopped basil
2 tbs fresh snipped chives
1 stick unsalted butter softened
1 tsp fresh ground black pepper
1/2 tsp salt
curry butter
1 cup unsalted butter
1/2 tbs curry powder
1 tbs fresh lemon juice
1/2 tsp ground ginger
strawberry butter
1/2 cup unsalted butter
1/2 cup pureed strawberries
1 tbs powder sugar
1 tsp grated orange zest
or
1 tsp fresh lime juice
ginger peach butter
1/2 cup unsalted butter
1/4 cup sugar
3/4 tsp chopped crystalized ginger
dash salt
1/4 cup mashed ripe peaches
Directions:
1. For all herb butters:
2. soften butter
3. Blend in herb etc and beat with electric mixer medium speed 1 to 2 minutes
4. For herb butters:
5. Turn mixture onto a piece of plastic wrap and form butter into a log about 2 inches into diameter
6. Freeze or refrigerate till firm
7. Cut into pieces as needs
