AKA african vegetarian stew. Root vegetables, chick-peas, cous cous, with a few raisins to keep it interesting.....ALL my favourites havin a big ol' vegetarian orgy in my stew pot. WOO HOOO. ok...calm down, Zoe. Read more ..... Ingredients:
4 parsnips, peeled, cut into chunks |
1 large onion, chopped |
2 sweet potatoes, chopped into chunks |
2 zucchini, thickly sliced |
1 can chopped tomatoes (or 5 fresh ones) |
1 can chick peas, (garbanzo beans) drained |
1/2 cup cous cous |
1/4 cup raisins |
1 tsp ground coriander seeds |
1/2 tsp tumeric |
1/2 tsp ground ginger |
1/2 tsp cinnamon |
1/2 tsp cumin |
3 cups water |
Directions:
1. Throw everything in a big pot, bring to the boil then simmer for about 20 minutes ill the vegies are tender. TOO FRICKEN EASY!!! 2. *** You can serve the cous cous separatey if you want, but thats just more dishes int it? and i like how it make the stew all thick like when you cook it in with it. |
