I have no idea where I got this recipe, but it is in my favorites recipe box and I make it often. The fennel adds a great taste. Hope you enjoy as much as I do. Ingredients:
1/4 cup vegetable oil |
2 cups self rising cornmeal |
1-1/4 cups milk |
1 egg beaten |
1-1/2 teaspoons cracked fennel seed |
1-1/2 teaspoons cracked pepper |
Directions:
1. Preheat oven to 450. 2. Pour shortening in a cast iron skillet then place skillet in oven. 3. Place cornmeal in a bowl and whisk in milk and egg. 4. Add fennel and pepper then stir until thoroughly blended. 5. Stir the hot shortening into the batter then pour the batter into the hot skillet. 6. Bake 20 minutes then serve piping hot with butter. |
