My Daughter loves this meal and I searched the Web for ideas and this is my version. Ingredients:
3/4 cup kraft® grated parmesan cheese |
3/4 cup breadcrumbs |
3 egg whites |
3 teaspoons water |
4 chicken breasts, sliced thinly lenght ways into 8 pieces |
2/3 cup mozzarella cheese |
1 (400 g) can crushed tomatoes |
1 teaspoon mixed herbs |
3 teaspoons olive oil |
Directions:
1. 1. Preheat the oven to 200°C Place crumbled Parmesan cheese on a plate or sheet of grease proof paper. Place Bread crumbs in a large flat bowl or another sheet of grease proof paper. Put eggs whites in bowl with water and beat. 2. 2. Mix crushed tomatoes with the mixed herbs and set aside. 3. 3. One at a time dip sliced chicken breast into Parmesan then egg white then bread crumbs. 4. 4. Heat oil in a large fry pan on a moderate. If you can’t fit all the chicken in one batch do two batches. Cook chicken for 3 minutes on each side to brown crumbs. 5. 5. Transfer chicken to large baking tray. 6. 6. Spoon on tomato sauce and then sprinkle mozzarella cheese on top. Bake for 15 minutes or until chicken is cooked through. 7. Serve with baked potatoes and vegetables. |
