Bean and Barley Ingredients:
1/4 cup pinto bean |
1/4 cup red bean |
1/4 cup lima bean |
1/4 cup navy bean |
1/4 cup black bean |
1/4 cup black-eyed peas |
1/4 cup split pea |
1/2 cup lentils |
1/4 cup barley |
1 cup vegetable broth |
2 cups brown rice |
1 onion |
1 cup carrots |
2 tomato |
16 clove garlic |
Directions:
1. Cook rice. 2. Boil beans with 1 head of garlic and 1 green pepper for 3 hours. Halfway through, remove head of garlic and sqeeze garlic into bean mixture. 3. Saute onion, carrot, tomato. Let cool, then process in blender. 4. Pour onion, carrot, and tomato mixure into beans. 5. Server beans over brown rice. |
