75 Year Old Orange Date Nut Cake |

This recipe is at least 75 years old. So very moist, made with buttermilk, and the orange glaze just makes it awesome. Orange Date-Nut cake is traditional in our family. Wonderful for Christmas. Ingredients:
2 sticks unsalted butter, softened |
4 cups sugar, divided |
4 large eggs |
4 cups all-purpose flour |
1 teaspoon soda |
1-1/2 cups buttermilk |
1 (8 ounce) package chopped sugared dates |
1 cup toasted pecans, then chopped (i chop by hand, think it's better than bought chopped pecans) |
4 teaspoons grated orange rind, divided |
1 cup orange juice |
Directions:
1. In large mixer bowl, on medium speed beat butter until fluffy 2. Gradually add ONLY 2 cups sugar, beating well 3. Add eggs, 1 at a time, beating until blended after each addition 4. In another bowl, combine flour and baking soda 5. Add to butter mixture alternately with buttermilk, beginning and ending with flour mixture 6. Beat at low speed until blended after each addition 7. STIR in dates, pecans, and ONLY 2 teaspoons grated orange rind 8. Pour batter into greased and floured 10-inch tube pan 9. Bake at 350 for 1 hour 10 minutes or until sooden pick inserted in center comes out clean 10. Bring orange juice, REMAINING 2 cups sugar and REMAINING rind to boil in saucepan, stirring constantly, 1 minute 11. Carefully run a knife around edge of cake gently, punch holes in cake with a wooden pick 12. Drizzle orange juice glaze over warm cake 13. COOL IN PAN on wire rack 14. When cool, turn cake onto plate or stand 15. ABSOLUTELY DELICIOUS! WONDERFUL! ENJOY! |
