This is Maida Heatter's icing recipe for her Devil's food Cake. I think being a devil is worthwhile. :-) Ingredients:
4 egg whites |
1 1/2 cup sugar |
1/4 cup plus 1 tbsp cold water |
1 tsp cream of tartar |
1/8 tsp salt |
1 1/2 tsp vanilla |
Directions:
1. Mix everything except the vanilla in the top of a large double-boiler; it must have at least an 8 to 10 cup capacity. 2. Place over moderate heat. 3. Beat with an electric beater at high speed for about five minutes until the mixture stands up in high peaks when the beaters are withdrawn. 4. Immediately, to stop the cooking, transfer the mixture to the large bowl of an electric mixer. Add the vanilla and beat at a high speed until the icing is smooth and stiff. Use immediately. 5. Stack and frost each layer. Then spread over the sides and top of the cake. |
