I got this recipe from this thread: /calorie-cupcake-yes-includes-frosting-ft132385 I put it in the analyzer with some modifications (sugar free jell-o, fat free cool whip), and it came out even lower in calories. You can change the flavors per your preference - strawberry, raspberry, etc. Fresh fruit on top is a nice addition. Ingredients:
1 pkg angel food cake mix |
8 g (1 box) peach jell-o |
9 oz water, 1 cup/1 tbsp |
1 medium peach, peeled and minced into small pieces |
225 g (1 8 oz tub) cool whip, fat-free |
Directions:
1. Preheat oven to 375 degrees. 2. Take the chopped up peaches, put them in a large bowl. 3. Add the cake mix, 3 tbsp of the dry peach jell-o mix, all the water (1c and 1 Tbsp) and mix together. 4. Fill cupcake liners/pan 3/4 full with batter. 5. Put in the oven at 375 for roughly 12-15 minutes. 6. Ready when lightly browned top. 7. REFRIGERATE REMAINING MIXTURE WHILE YOU ARE BAKING A BATCH! 8. Cool cakes completely. 9. Mix the remainder of the jell-o mix into the tub of coolwhip. 10. When cakes are cooled, spread 1 tbsp of cool whip mix atop each cupcake. |
