Ingredients:
1 can(s) black beans
1 can(s) pinto beans
1 can(s) chickpeas
1 can(s) red kidney beans
1 can(s) white beans
1 can(s) sweet unsalted corn
1/2 cup(s) green pepper chopped
1/2 cup(s) red pepper chopped
1/2 cup(s) red onion chopped
3 tablespoon(s) ev olive oil
3 tablespoon(s) red wine vinegar
1 teaspoon(s) salt, to taste
1 teaspoon(s) black pepper, to taste
Directions:
1. Open all beans, place in a strainer, rinse and drain. Put into a large bowl with all other ingredients and toss. Put bowl in fridge until cool and ready to serve.
2. Can red pepper or chopped fresh jalapeno to give this dish a little kick!
