1/4 cup butter |
1/4 cup flour |
1/2 cup green pepper, chopped |
1/2 cup onion, chopped |
1/2 cup celery, chopped |
1 clove garlic, minced |
14 ounces sausage (your choice), sliced |
14 ounces diced tomatoes, drained |
14 ounces chicken stock |
10 ounces frozen okra, thawed and sliced |
1 small bay leaf |
1/4 teaspoon dried thyme |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
1/2 pound medium shrimp, cleaned |
6 cups hot cooked rice |
Directions:
1. Melt butter in large skillet on medium high heat. 2. Stir in flour. 3. Cook for 4 minutes OR until golden brown, stirring frequently. 4. Add green pepper, onion, celery and garlic. 5. Cook 2 to 3 minutes OR until crisp-tender, stirring occasionally. 6. Add sausage, tomatoes, broth, okra, bay leaf and thyme. 7. Stir until well blended. 8. Season with salt and black pepper to taste. 9. Bring to a boil. 10. Reduce heat to medium low, cover. 11. Simmer 5 minutes, stirring occasionally. 12. Stir in shrimp. 13. Cook 5 minutes OR until shrimp are opaque, stirring frequently. 14. Remove and discard bay leaf. 15. Spoon over hot rice. |
