30 Minute Braised Chicken |

This light, tasty chicken dish from BBC Good Food really is ready in 30 minutes! The fruit really complements the chicken. I made it with dried apricots since that is what I had on hand but you may substitute an equal amount of dried prunes. This dish is wonderful served with mashed potatoes. Ingredients:
1 large onion, sliced |
1 tablespoon olive oil |
1 garlic clove, crushed |
8 boneless skinless chicken thighs |
2 apples, cored and cut into chunks |
4 ounces dried apricots |
1/2 cup white wine |
1/4 cup fresh parsley, chopped |
Directions:
1. Place a heavy pan over high heat, then add the onion with the oil. 2. Stir well and cook for 2 minutes, then add the garlic. 3. Add the chicken, then cook for a few minutes, turning each piece until they all have a little colour. 4. Add the chopped apples and dried apricots, stir well, pour in the wine, then bring to a boil. 5. Simmer, covered, for 20 minutes, until the chicken is tender. 6. Sprinkle with the parsley. |
