3 Step Chile Relleno Casserole |

A great recipe from pantry ingredients- taste like a real chile relleno without the frying or work. Ingredients:
2 cups shredded cheese (mexican blend, cheddar, monterey jack- your preference) |
1 (28 ounce) can whole green chilies, drained |
3 eggs |
6 ounces evaporated milk (do not substitute) |
1 tablespoon flour, heaping |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. mix together eggs, milk, flour, salt and pepper. 2. place chilies in a deep dish pie plate, or any medium size casserole dish. 3. place cheese on top. 4. pour egg mixture over. 5. Bake in 350 degree oven for 40-45 minutes until light brown on top. 6. for a larger crowd, easy to double in the 9 x13 pan. |
