I love using lots of peppers, sweet, spicy and smokey. The cocoa powder gives this chili its depth, don't worry it doesn't taste like chocolate. Ingredients:
2 1/2 lbs beef (i use a cheep cut and chop it up in the food proccesor, smaller than stew meat larger than ground be) |
2 (14 ounce) cans pinto beans (any kind of bean will do) |
2 (14 ounce) cans tomato sauce |
1 (20 ounce) can petite tomatoes |
2 bell peppers, roasted |
6 anehim bell peppers, roasted |
6 dried ancho chilies, seeded |
2 medium onions |
2 -4 garlic cloves, minced |
1 tablespoon mexican oregano |
1 -2 tablespoon paprika |
1 tablespoon chili powder |
2 tablespoons unsweetened cocoa powder |
salt & pepper |
Directions:
1. Brown ground up meat, onions and garlic. 2. Chop and seed all peppers, add to meat. 3. Add tomatoes, tomato sauce, drained beans, 4. spices and cocoa powder. 5. Simmer chili till all flavors combined and ancho peppers soften, at least 1hr. Or put it in your crockpot. |
