3-cheese Scrambled Eggs

Great served along side fried fish and grits.
Ingredients:
4 eggs
1/2 cup heavy cream
salt and pepper - to taste
3 tsp butter
1/4 cup provolone cheese, shredded
1/4 cup monterey jack cheese, shredded
1/4 cup mozzarella, shredded
6 - 8 scallions, chopped
Directions:
1. In bowl whisk eggs
2. Whisk in cream, salt, and pepper
3. Over medium heat, in a nonstick pan, melt 2 tsp of butter
4. Pour in eggs
5. Cook, stirring constantly, until eggs are bright yellow and fluffy
6. Stir in remaining 1 tsp of butter
7. Add cheeses and scallion, mix well
8. Serve
