Another,hearty vegetarian meal! 8) Ingredients:
4 cups potatoes, peeled and cubed |
8 ounces cream-style cottage cheese |
8 ounces sour cream |
1/2 green onion, chopped |
1 tablespoon fresh parsley, chopped |
1 clove minced garlic |
1/2 teaspoon salt |
1/2 cup cheddar cheese, shredded |
paprika |
Directions:
1. Preheat oven to 350. 2. Lightly,grease a 1 1/2 qrt casserole. 3. Cook the potatoes in boiling salted water for 15 minutes-or tender. 4. Drain well. 5. In a large mixing bowl,combine the next 6 ingredients. 6. Mix well. 7. Stir in the potatoes. 8. Spoon potatoes into casserole. 9. Bake for 25 minutes. 10. Sprinkle the cheddar cheese&paprika. 11. Bake for 5 minutes or until cheese has melted. |
