3 Cheese Chicken Enchiladas |

Ingredients:
8 flour tortillas |
10 ounces enchilada sauce |
4 ounces cream cheese |
3/4 cup sour cream |
1/4 teaspoon salt |
1/4 teaspoon ground cumin |
1/4 teaspoon pepper |
2 cups shredded chicken |
2 cups shredded monterey jack cheese, divided |
1 cup shredded cheddar cheese |
Directions:
1. Heat oven to 350 degrees. 2. In a large bowl, mix together the cream cheese and sour cream until it is smooth. 3. Stir in cumin, salt and pepper. 4. Add the chicken, 1 cup Monterey Jack cheese and the cheddar cheese. 5. Dip the tortillas in the enchilada sauce to lightly coat. 6. Place some of the mixture in the center of the tortillas; roll. 7. Place the tortillas seam side down in a lightly greased 13x9 pan. 8. Cover with the remaining sauce. 9. Bake for 25 minutes. 10. Sprinkle the remaining cheese and bake for 3 more minutes. |
