Ingredients:
25 garlic cloves
2 medium onions, sliced
1 tablespoon olive oil
4 tablespoons water
3 cups tomatoes, peeled and chopped
2 cups tomatoes
2 cups beef broth
2 cups cottage cheese
1/3 cup barley
Directions:
1. Blanche the garlic for about 30 seconds until slightly soft.
2. Cool, peel, and thinly slice.
3. Mix water and olive oil.
4. Saute onions in oil until they are soft and golden.
5. About 10 minutes.
6. Add garlic, tomatoes and tomato juice to onions.
7. Bring to a boil, then reduce and simmer 30 minutes.
8. Serve in Bowls.
9. Add 1/4- 1/2 cup of cottage cheese in each bowl.
