The best carrot cake ever. It makes great wedding or special occasion cakes. Great with cream cheese icing. I got the recipe over 25 years ago from the gal who taught me cake decorating. Ingredients:
2 cups flour |
2 teaspoons baking powder |
1 1/2 teaspoons baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
2 cups sugar |
1 1/2 cups oil (or can use 3/4 cup oil and 3/4 cup applesauce for a lighter cake) |
4 whole eggs |
2 cups grated carrots |
8 ounces crushed pineapple in juice; undrained |
1/2 cup chopped walnuts |
Directions:
1. Sift dry ingredients together into large bowl. 2. Add sugar, oil and eggs, mix well. 3. Add carrots, pineapple with juice and nuts. 4. Bake in greased and floured 9x13 pan or bundt pan at 350* for about 45 minutes or until done. 5. Cool on rack. 6. Frost with Cream Cheese Frosting. |
