1 tablespoon oil |
4 small boneless skinless chicken breast halves (about 1 lb.) |
1 (10 3/4 ounce) can condensed cream of chicken soup |
2 cups minute white rice, uncooked |
2 cups broccoli florets (fresh or frozen, thawed) |
Directions:
1. HEAT oil in large non-stick skillet on medium-high heat. 2. Add chicken, cover and cook 4 minutes on each side or until cooked through. 3. Remove chicken from skillet. 4. ADD soup and 1 soup can (1-1/3 cups) water to skillet; stir. 5. Bring to boil and stir in rice and broccoli. 6. Top with chicken; cover and cook on low heat 5 minutes. 7. Season to taste. |
