A zesty, spicy, sweet shock to the pallet. Which arouses the senses.
Ingredients:
5 medium white potatoes
4 medium yams
1 onion
2 garlic cloves
3 handfuls snap peas
salt
pepper
cinnamon
sage
olive oil
Directions:
1. Slice and dice raw potatoes and yams (with or without skin)
2. slice onions thin, slice red pepper strips (yellow and orange work well too), dice garlic, snap ends of peas (toss ends) then snap in half. set aside
3. using a 1 large skillet; add 3 tablespoons oil. combine ingredients into skillet and cover over medium heat and simmer about 7 minutes. sprinkle salt, pepper, and cinnamon across entire dish evenly (once). along with a pinch of fresh sage. Saute about 7 minutes.
4. I served this with baked and bb-q'ed chicken.
