This is my friend Pam's mother's recipe.She used to bring these into work and I begged her for the recipe for 3 years and finally got it.This is by far the best pumpkin recipe I've ever had! I hope you enjoy it too! Read more ! Ingredients:
4 eggs |
1 2/3 c. sugar |
1 c. oil |
1 15oz. can of pumpkin |
2 c. flour |
2 tsp. baking powder |
2 tsp. cinnamon |
1 tsp. salt |
1 tsp. baking soda |
frosting |
3 oz. softened cream cheese |
1 stick softened butter (no margarine,please) |
1 tsp.vanilla extract |
2 1/2 c. powdered sugar |
Directions:
1. Preheat oven to 350 degrees 2. Beat together until fluffy (with mixer):eggs,sugar,oil,pumpkin. 3. Then add all dry ingredients and mix well w/mixer. 4. Spread batter into ungreased 15x10x1 baking pan. (you want a shallow pan for this recipe) 5. Bake for 25-30 minutes. 6. Let cool completely. 7. Cream frosting ingredients together and frost,cut into squares. |
