This is my friend Pam's mother's recipe.She used to bring these into work and I begged her for the recipe for 3 years and finally got it.This is by far the best pumpkin recipe I've ever had! I hope you enjoy it too! Read more !
Ingredients:
4 eggs
1 2/3 c. sugar
1 c. oil
1 15oz. can of pumpkin
2 c. flour
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
frosting
3 oz. softened cream cheese
1 stick softened butter (no margarine,please)
1 tsp.vanilla extract
2 1/2 c. powdered sugar
Directions:
1. Preheat oven to 350 degrees
2. Beat together until fluffy (with mixer):eggs,sugar,oil,pumpkin.
3. Then add all dry ingredients and mix well w/mixer.
4. Spread batter into ungreased 15x10x1 baking pan. (you want a shallow pan for this recipe)
5. Bake for 25-30 minutes.
6. Let cool completely.
7. Cream frosting ingredients together and frost,cut into squares.
