This came out of the First Place weight loss book. Yummy and low fat. Exchanges: 3 meats, 1/2 fat. Ingredients:
6 4-oz salmon fillets, each 1 in. thick |
1 tablespoon olive oil |
splash lemon juice(enough to moisten each fillet) |
fresh rosemary to taste |
paprika to taste |
adobo seasoning to taste |
black pepper to taste |
salt to taste |
honey to taste |
1/4 cup chopped pecans |
non-stick cooking spray |
Directions:
1. Preheat oven to 450 degrees F. In oven, preheat baking dish drizzled with olive oil. 2. Place fillets skin-side down on flat surface, rub with lemon juice. 3. Sprinkle with seasonings in following order: 4. rosemary - paprika - adobo - black pepper - and salt. 5. Lightly drizzle with honey; sprinkle with pecans and seal with generous coating of cooking spray. 6. Place fillets skin-side down in preheated baking dish. 7. Bake 10 - 15 minutes or until fillets flake easily with fork. 8. Serves 6 9. Exchanges: 3 meats, 1/2 fat |
