Ingredients:
pastry for a double-crust
1/2 c sugar
2 ts flour
1 lemon -- grated rind of
1/4 ts ground allspice
1/4 ts salt
4 c green tomato: peel, slice
1 t lemon juice
3 ts butter
Directions:
1. Line a pie pan with pie dough. Mix the sugar, flour,
2. lemon rind, allspice, and salt together. Sprinkle just
3. a little of this at the bottom of the pie shell.
4. Affange the tomato slices, a layer at a time, as you
5. cover each layer with the sugar mixture, lemon juice,
6. and a dot of butter on each slice. Keep layering until
7. you reach the top of the pie tin. Cover with a
8. latticed top and bake at 350 for 45 minutes.
