This is good. I like to put 3 T. crumbled bacon in it, too. Would've entered it, but couldn't find it. Ingredients:
1 fennel bulb, sliced 1/4-inch thick |
1 leek, sliced 1/4-inch thick |
8 oz. potatoes, sliced 1/4-inch thick |
2 t. olive oil |
2 tsp. salt |
1 tsp. pepper |
1/4 c. parmesan cheese, grated |
Directions:
1. Preheat oven to 425 degrees. 2. Spray a 9 X 13 casserole dish with vegetable cooking spray. 3. Put fennel, leek & potato in baking dish. 4. Add olive oil. 5. Add crumbled bacon if you have it. 6. Add salt and pepper. 7. Put in oven and cook for 25-30 min. 8. Top with cheese at the end. |
