Started making these when I needed a quick breakfast treat. Now make them all the time when we go camping as I usually have all the ingredients on hand.
Ingredients:
1 1/4 c. flour
1 1/4 tsp. baking powder
1/2 tsp. salt
2 tsp. sugar
2 tblsp. margarine or butter
1 egg
1/4 c. milk
1/4 c. raisins, craisins, chopped dried apricots, or chocolate chips (optional)
sugar or cinnamon sugar
Directions:
1. Preheat oven to 450 degrees
2. Grease an 8 in. round cake pan
3. Mix the dry ingredients.
4. Cut in the margarine.
5. Beat the egg and milk and mix into the dry ingredients till dough holds.
6. Add the fruit or chips if desired.
7. Form into ball and knead 12 times.
8. Place in pie pan and pat into 6 in. circle, 3/4 inch deep.
9. Cut into 4 to 6 wedges, NOT all the way through.
10. Sprinkle top with sugar or mixture of cinnamon/sugar
11. Bake 8-10 minutes or till golden.
12. Serve warm with extra butter, jam and tea or coffee
