A rich soup from The Star. Wonderful; a meal in its own. Ingredients:
1/3 cup butter |
1/4 cup diced onion |
1/4 cup diced celery |
3 tablespoons all-purpose flour |
1 teaspoon salt |
3 cups whole milk |
1 cup tomato juice |
2 (213 g) cans salmon, flaked with fork |
Directions:
1. In heavy saucepan, melt butter over medium-high heat. 2. Add onions and celery. 3. Cook until tender, 3 to 5 minutes. 4. Whisk in flour and salt, blending well. 5. Slowly add milk, stirring constantly, and cook until thick, about 3 minutes. 6. Add tomato juice, stirring until blended. 7. Add salmon, stir. |
