From Simply Delicious - A cookbook compiled of Herberger's Employee Family Recipes. Submitted by Anita Sheehan of Alexandria, Minnesota. Ingredients:
2 cups flour |
2 cups sugar |
2 teaspoons baking soda |
1 teaspoon salt |
1 teaspoon cinnamon |
1/2 teaspoon allspice |
3/4 cup oil |
4 eggs |
3 cups carrots, grated |
1/4 teaspoon ground cloves |
1/4 cup margarine or 1/4 cup butter |
4 ounces cream cheese, softened |
1 teaspoon vanilla |
1 3/4 cups powdered sugar |
1/2 cup chopped nuts |
1/2 cup coconut |
1/2 cup raisins |
Directions:
1. Measure all ingredients and mix in a large bowl- Beat for 4 minutes. 2. Pour into a 9 x13 greased pan. 3. Bake for 35 to 40 minutes at 350 degrees. 4. To make frosting, cream margarine, cream cheese and vanilla; fold in remaining ingredients. 5. Frost cake when cake is cool. |
