112-Calorie Quick Vegetarian Pizza

This pizza-on-a-tortilla recipe is easy to prepare ahead of time and have the diced ingredients on hand to assemble at will. I keep a small jar of the sauce made up and ready to go, and a tupperware of my vegetable mixture. It is a satisfying after-workout snack or light dinner. If you prefer other toppings, make sure you change the calorie content accordingly! One serving is one pizza.
Ingredients:
8 tortillas (6 tortillas, preferably whole wheat. 50 calories are allotted so add calories if you use a different tortilla.)
3/4 cup (1 can) condensed tomato soup
1 tsp thyme, dried
1 tsp basil, dried
1 tsp italian seasoning, dried
1 cup onion, diced finely
3/4 cup garlic, diced
10 oz (1 package) spinach, frozen
2 cups broccoli florets, chopped fairly fine
Directions:
1. Preheat oven to the BROIL setting.
2. Thaw spinach and broccoli thoroughly. I like to run my sink full of warm water and put the pouches in there (Still sealed) until they are thawed when I am in a hurry.
3. Mix condensed tomato soup (do not add anything, just the soup straight out of the can) with the thyme, basil, and italian seasoning.
4. Dice up the onion and garlic. Toss with thawed spinach and broccoli until the spinach is no longer clumped up. (Note that if you use fresh spinach it won't come all in one big lump.)
5. Place a tortilla flat on a cookie sheet and put it in under the broiler. I have had good luck at about 10 inches away from the broiler. Watch this tortilla very carefully. Broil for about 3 minutes for until it is just puffing up and turning brown. It will go from 'perfect' to 'on fire' in less than a minute so do not walk away at this point.
6. Take the cookie sheet out and add ingredients. A couple of tablespoons of sauce and 1/8 of your vegetable mixture should be spread over the top of the tortilla. You can add 1 oz (a *scant* 1/4 cup, don't cheat) shredded mozzarella cheese to the top if you prefer cheese pizza, but that adds ~75 calories per pizza.
7. Put the pizza back under the broiler. Again, watch closely as it will be ready in ~3-4 minutes and is easy to burn. When the sauce is just a little dry at the edges of the crust, the pizza is done. (When the cheese is melted, if you used cheese.)
