100% Whole Wheat Blueberry Muffins #2 |

Got the basis of this recipe from 100% Whole Wheat Blueberry Muffins and then tweaked it to my liking. They turned out fantastic and just the right amount of sweetness but still a healthier option. Ingredients:
2 cups whole wheat flour |
2 tablespoons wheat germ |
1 teaspoon baking soda |
1/2 teaspoon cinnamon |
1/2 cup brown sugar |
1/2 teaspoon salt |
1 1/4 cups buttermilk |
1 egg |
1/4 cup honey |
1 teaspoon vanilla |
1/3 cup canola oil |
1 1/4 cups dried blueberries |
Directions:
1. Mix first 6 ingredients together plus the blueberries. Wisk together rest of ingredients in a seperate bowl. Pour into dry ingredients and mix until just combined. Pour into greased mini muffin cups. Bake at 350 degrees for approximately 20mins. They are done when a toothpick comes out clean. Allow to cool. |
